Le 5 Stagioni Active Dry Yeast is a professional-grade dried brewer's yeast grown from a pure selected strain of Saccharomyces cerevisiae under controlled conditions. Vacuum-packed to preserve activity, it offers the reliability and consistency of fresh yeast in a shelf-stable format with a two-year shelf life, making it a practical choice for kitchens and bakeries that want a dependable leavening agent without the handling demands of fresh yeast.
Used at approximately half the dosage of fresh yeast, it performs across the full range of naturally leavened bakery products, from pizza and focaccia to bread, pastries, and donuts. It pairs directly with Lemady for kitchens running a sourdough-enhanced production, and works across the full Le 5 Stagioni flour range from Rinforzata (Green) through to Oro (Red). Once opened, the product should be transferred to a sealed container and refrigerated, where it will remain active for up to 30 days.
