Garofalo Calamarata is a large, wide ring-shaped pasta made from 100% durum wheat semolina, produced in Gragnano, Italy under IGP (Protected Geographical Indication) certification. Part of the paccheri family, Calamarata takes its name from the calamaro — squid — whose sliced rings it closely resembles in both form and proportion. That resemblance is no coincidence: the shape was developed alongside the dish it is most associated with, Calamarata e calamaretti, a Neapolitan seafood preparation in which pasta and squid rings sit together so naturally on the fork that the two become almost indistinguishable. It is one of the more poetic examples in Italian cuisine of a pasta shape designed specifically for a single, defining preparation.
