Le 5 Stagioni Gluten-Free Pizza Mix is a certified gluten-free and milk-free base mix built for professional kitchens that need to serve celiac and gluten-intolerant diners consistently and confidently. With a gluten content at or below 20 ppm, it meets the internationally recognised threshold for gluten-free certification, making it a reliable choice for restaurants, pizzerias, and catering operations that take dietary compliance seriously.
The mix combines corn and potato starches with a blend of vegetable fibres, millet, rice, and legume flour to produce a dough that handles cleanly and bakes to a structured, satisfying base — without the gumminess or fragility that can undermine gluten-free pizza. It is also completely milk-free, covering guests managing more than one dietary restriction. Preparation is straightforward, requiring only a few additional ingredients, and the mix integrates naturally into an existing Le 5 Stagioni production setup alongside Rinforzata (Green), Superiore (Blue), Pizza Napoletana (Red), or Oro (Red) as a fully separate, cross-contamination-conscious line.
