Le 5 Stagioni Lemady is a dried wheat mother dough concentrate that brings authentic sourdough character to pizza and bread. At 91% dried wheat sourdough, it is a high-concentration product: a small addition to any flour batch produces measurable results in aroma, crust development, and digestibility that standard brewer's yeast alone cannot achieve. It delivers the acidity, flavour depth, and improved dough structure that come from proper fermentation, without the demands of maintaining a live starter.
Lemady is added directly to flour alongside brewer's yeast at dosages between 2 and 20g per kilogram, scaled to the flour and the process. Lower dosages work well with strong flours at standard hydration; higher dosages are recommended for medium and low protein flours, semi-wholemeal and wholemeal flours, and high-hydration doughs. It is compatible across the full Le 5 Stagioni flour range, from Rinforzata (Green) for shorter fermentation work through to Oro (Red) for long, slow-fermented doughs, and should not be combined with other dough improvers or technological adjuvants.
