Villani Mortadella La Santo is a PGI-certified Mortadella Bologna produced at the Villani facility in Bologna, in full compliance with the regulations of the Consorzio Mortadella Bologna. Made from derinded pork shoulder trimmed of fat, with pieces of neck fat and a scattering of pistachio nuts, each piece is slowly cooked and lightly seasoned with fresh garlic — a combination that gives La Santo its characteristic enticing fragrance and distinctively light, delicate flavour. The uniform pink colour, pearly white diced fat, and clean oval profile are the hallmarks of a well-made mortadella, and the PGI designation guarantees both the origin and the production method behind every piece.
