Made from pork and sea salt alone, the leg is cured for a minimum of 13 months before being carefully deboned, knife-trimmed, and pressed into a compact brick shape that maximises slice yield and reduces waste at the counter. "Mattonella" — meaning brick in Italian — refers precisely to this format, which is designed with professional kitchen and deli use in mind.
