Made from whole sheep's milk with salt, lamb rennet, and milk ferments, it is matured for a minimum of 5 months, developing the compact, slightly holed paste, thin white rind, and bold, aromatic flavour that have made it one of Italy's most enduring and widely used hard cheeses.
