Villani Salame Milano is a classic Italian dry-cured salami produced in Castelnuovo Rangone, Modena — a region long associated with the finest Italian salumi craft. Made from fine cuts of pure national pork including shoulder and jowl, the meat is minced to a medium-fine "rice-grain" texture before being seasoned with a pinch of crushed black pepper, wine, and spices. The salami is then cured for a minimum of 75 days, during which the characteristic sweet, strong flavour of the Milano tradition develops fully — a compact, uniform ruby-red slice with a clean distribution of pearly white fat that is immediately recognisable.
A high-yield format built for professional slicing. The cylindrical shape and flat bases are designed to maximise slice yield on a machine slicer, with the recommended technique being a thin, slanted cut that brings out the compact texture and even colouring of each slice. The flour-coated exterior is characteristic of the Milano style and reflects the traditional casing method used throughout the curing period. Gluten-free and dairy-free, each piece is vacuum-packed with a 150-day shelf life.
