About The Product

Le 5 Stagioni Durum Wheat Semolina is milled from durum wheat and intended primarily for bread production, particularly doughs with long fermentation times. It produces the qualities that define well-made durum wheat bread: a golden yellow crumb, soft and uniform texture, and a clean, characteristic flavour that soft wheat flours cannot replicate. With a protein content of 13% minimum, it has the strength to hold up across extended fermentation without the dough breaking down.

Beyond bread, it works naturally as a fresh pasta base and as a bench dusting flour, where its coarser granulometry prevents sticking without being absorbed into the dough. For kitchens already working with Spolverina as a dedicated pizza dusting flour, this semolina serves a different purpose: it is a production flour first, suited to operations that want to extend their offering into durum wheat bread or pasta alongside their existing Le 5 Stagioni range.
