Le 5 Stagioni Semola Rimacinata is a double-milled durum wheat semolina, ground finer than standard semolina for a smoother, more workable texture. The remilling process makes it easier to handle across a broader range of applications, while retaining the natural golden colour, soft crumb, and characteristic flavour that durum wheat is known for. Like the standard Durum Wheat Semolina, it is suited to long-fermentation bread production, where those qualities come through most clearly.
The finer grind also makes it the more practical choice for fresh pasta and gnocchi, where coarser semolina can be difficult to bring together cleanly. For kitchens already working with the standard semolina for bread, the Rimacinata extends the range into pasta and other applications where a finer texture is needed.
