Garofalo Spaghetti is a long, thin, round-section pasta made from 100% durum wheat semolina, produced in Gragnano, Italy under IGP (Protected Geographical Indication) certification. The name derives from "spago" — the Italian word for string — a reference first recorded in Niccolò Tommaseo's Italian dictionary of 1819, describing a pasta "of the thickness of a small and long string." That simplicity of form is precisely what makes spaghetti so enduring: a clean, versatile shape that works across the full breadth of Italian cooking, from the lightest olive oil dressings to slow-cooked meat sauces.
Bronze-die cut for a surface that holds every sauce. Extruded through traditional bronze dies, each strand develops a naturally rough, porous texture that allows condiments to cling rather than slide. This tactile quality — noticeable even to the touch — is what distinguishes Garofalo Spaghetti from smoother, commercially produced alternatives. With a cooking time of 10 minutes and consistent performance across batches, it is a dependable and efficient choice for professional kitchens managing high-volume service without compromising on quality.
The most versatile long pasta on the menu. Few pasta formats offer the range of application that spaghetti does — from delicate seafood and vegetable sauces to bold, slow-cooked ragùs. Supplied by Sapori in a 24 x 500g case, Garofalo Spaghetti is a practical staple for restaurants, catering kitchens, delis, and wholesale accounts across Cape Town and the Western Cape seeking authentic, IGP-certified Italian pasta with proven provenance.
