About The Product

Le 5 Stagioni Spolverina is a durum wheat flour milled and sifted specifically for use as a pizza dusting flour. Its coarser granulometry relative to standard soft wheat flour means it does not absorb into the dough the way tipo 00 would, keeping the base mobile on the work surface without affecting the dough's hydration or structure. The result is cleaner handling, less tearing, and a finished crust that bakes to a more fragrant, evenly golden base.

Spolverina contributes a subtle golden colour and slight crispness to the underside of the base that soft wheat dusting flours do not produce. It is a straightforward addition to any pizza kitchen already working with the Le 5 Stagioni range, from Rinforzata (Green) for high-volume daily production through to Pizza Napoletana (Red) and Oro (Red) for longer fermented, more delicate doughs where clean, controlled handling matters most.
